Paxton Wines was founded in 1979 by respected viticulturalist David Paxton, and since 2011 now runs a fully organic and biodynamic operation in the small, rural town of McLaren Vale in South Australia. The family believes in two core principles: site selection and minimalist intervention in the winemaking process. They believe treating the vineyards like whole living organisms and maintaining complex soil biology yield more complex, but truer wines. This blend of Shiraz and Grenache bears the AAA “stamp” - a throwback to David Paxton’s former days in the wool industry where the Guesser would stamp AAA onto the best lots of wool. With 65% Shiraz and 35% Grenache, this wine shows notes of plums and cherries, with perhaps the lightest hint of paprika. Subtle touches of French and Hungarian oak on the wine after 12 months of maturation give it some structure, while not overpowering the wild mulberry and oregano flavors. Drink now or cellar carefully for the next 10-15 years!
