The territory of Chablis is unique in multiple ways - it is considered part of Burgundy, but in fact sits 80 miles north of the rest of the growing region, and is geographically closer to Champagne. Only Chardonnay is grown here in the Kimmeridgian Marl and Limestone soils, where winter temperatures can equate those of Norway sometimes. Domaine William Fevre represents one of the largest land holdings in Chablis. Since the first vintage in 1959, DWF has acquired over 78 hectares, split into 90 parcels. He owns land in 5 out of the 7 Grand Cru vineyards in Chablis, and lets the centuries of winemaking tradition in the area be his guide. The Champs Royaux vineyard is organically cultivated, and the fruit is hand harvested and vigorously sorted before crushing. The Domaine uses old oak barrels, averaging 6 years, to enhance the classic flavors of Chablis. This wine shows aromas of bright citrus and stone fruit, with a stunning streak of minerality on the palate, complemented by bright acidity. Green apple, white flowers, fresh fruit while remaining dry and stony.
