The Delagrange coat of arms dates back to 1570, and the family has owned vineyards in the Cotes de Beaune ever since. Didier Delagrange is the sixth generation vintner at the estate. The philosophy and practice at Delagrange is that the majority of the work is done in the vineyard. The amount of manual labor that Didier performs in his vineyards is remarkable -- leaves are thinned by hand multiple times to remove those that shade the bunches, and canopies are trellised unusually high to counteract the severe lower thinning so that photosynthesis isn't stunted. In the cellar, Didier employs indigenous yeast and uses new oak only sparingly to craft wines that are very rich with precise aromatics and very pure fruit. This Chardonnay comes from plots with a southeastern exposure, in reddish gravel soil. The grapes are hand harvested and the juice is extracted by a pneumatic press, clarified and fermented in 228L and 300L vats. The wine is aged for 12 months in 20% new barrels, yielding a bouquet of hawthorn, acacia, lime and verbena combined with flint, citrus fruit and vanilla. It is Rich and full in the mouth. Great with grilled shellfish, foie gras, veal or poultry in white sauce and blue-veined cheeses.
