Two brothers, Stephane and Vincent, manage this family domaine. The Domaine is in Biodynamic conversion and uses no fertilizers, pesticides or herbicide, and minimal sulfur. This is practically unheard of in Muscadet. Less than 2% of producers hand harvest and even less operate organically. They are located just outside of the charming fortress town of Clisson. This is also now one of the three new crus for Muscadet known for its granitic soil. The grapes are hand harvested, whole cluster pressed, and ferment using only natural yeast. The wine spends 43 months in tank. The producers recommend opening it at least a day in advance of serving! Toasted notes, and candied fruit on the nose. Well-structured in the mouth, with creamy, doughy flavors coming from the extended lees contact. Lots of ripe fruit.
