This wine comes from a 12th century chateau in the Rhône Valley in Southern France. A blend of Grenache, Syrah, and Mourvèdre grown in a soil dominated by sandstone, this wine offers aromas of black currant, vanilla, and perhaps just a hint of cinnamon. These grapes are fully destemmed before they are fermented for 15 days in temperature-regulated tanks until they have the perfect balance of anthocyanins (giving the wine its hue) and tannins from the skins and seeds. Despite its clarity, this wine has enough body to stand up to a hearty beef dish, perhaps a prime rib crusted with Herbes de Provence? Despite the screwcap and the stigma attached to it, this wine could be cellared for the next five years, or consumed and enjoyed now!
