In 1930, Pascual Olivares Fernandez was convinced that Monastrell – Jumilla’s original variety that is incredibly well-adapted to its poor soils and scarce rains – was able to yield distinctive wines that reflected the land’s character. He began producing small quantities of wine to supply his region, and Bodegas Olivares was thus born. This dulce is the ultimate expression of Monastrell, with tremendous concentration, persistence and balance. The oldest vines of the estate retain their fruit late into the autumn each year. Once the grapes begin to raisin, they can reach astonishing levels of richness. When everything works perfectly, perhaps 5-6 years per decade, Bodegas Olivares is able to make their signature dessert wine. 100% Monastrell, the grapes undergo partial fermentation, with more than 30 days of maceration with skins. No wood contact. Complex smelling, the aroma of figs, dates and ripe fruits can be smelled with intensity and freshness.
