At Evening Land, the goal is to explore great terroir and reflect that greatness in every bottle tha is produced. This begins in the vineyard with a constant stewardship of the land. They strive to make wines that reflect only the essence of the vineyard – the unique conjunction between a place, nature and time. Nothing is added; nothing is removed. By practicing precision viticulture, the land is allowed to express itself. The wines are created with energy, purity, transparency and elegance with insistence on true appreciation of site. Situated in the southeastern Eola-Amity Hills, the Seven Springs Vineyard is dry-farmed using biodynamic practices. The Pacific Ocean breeze, volcanic soil, eastern exposure, and high elevation contribute to the natural preservation of the grapes' acidity and enrich the wines with elegant flavors and minerality. Today, Seven Springs Vineyard is a 70 acre vineyard, with iron-rich, volcanic rock with a thin layer of top soil. The 2014 Seven Springs Pinot Noir comes from the Vineyard’s oldest own-rooted blocks of Pinot Noir. Planted in 1984, these Pommard and Wadenswil clones thrive in iron-rich, volcanic Jory soils. The 30-year-old vines are harvested by hand, the grapes hand sorted, and roughly 75% of the fruit was destemmed. Gentle punch downs in open-top concrete and oak fermenters were employed throughout the indigenous fermentation to encourage a soft extraction of tannins. The wine was aged in 30% new French oak for 16 months and bottled without fining or filtering. Fresh and lively, with a supple texture around a sleek core of persistent raspberry,dark cherry and floral flavors. Complemented by a whiff of balsamic and a touch of briary undergrowth.
